The Jalisco Sunset is a sour, herbaceous cocktail served in a coupe glass with a sophisticated, skewered cantaloupe and rosemary garnish.
This cocktail was crafted by Amanda Swanson. She’s an Agave Spirit Specialist who goes by @JiggerHappy on instagram. If that instagram handle doesn’t scream “I know how to craft a mean cocktail!” I don’t know what would!
The star in this cocktail is the Hiatus Tequila Blanco. This fawlessly clear tequila is bursting with aromas of roasted agave, fresh-cut grass, and tropical fruit.
The flavor of this tequila is amazing in cocktails and even more of a delight when sipped on neat or on the rocks. They earned these bragging rights when Hiatus Blanco received the silver award at the San Francisco World Spirits Competition.
The fact that this is an award winning tequila is surprisingly not our favorite part about Hiatus. The meaning behind their name is truly the cherry on top to this beautiful brand.

They set out to create a premium tequila that reflects what’s important to them and (I’d like to think) the rest of us. They wanted to craft a tequila that would give people an escape from the daily grind, the status quo. Now that is a beautiful (and better yet) “Thirsty Approved” message!
The ingredients in this cocktail are not new to us, but we never thought to combine them! Sweet cantaloupe, sour lime juice, bittersweet Aperol, notes of rosemary, and the robust Hiatus Blanco. This cocktail is packed with flavor. We truly enjoyed every sip!
