The Coconut Dragon is a sweet, creamy, tropical dream that was inspired in the least tropical of places, the produce section of our local grocery store.
Never put a cap on your creativity. There are so many things that can inspire you to make a new cocktail. We look for inspiration at the liquor store, remembering a place we visited, the holidays, or sometimes we get inspired simply by a color!
We are constantly looking for things to trigger our creativity. The Coconut Dragon came to fruition by the want to experiment with a new fruit that we had never tried before. If you are familiar with dragon fruit, you know simply by it’s looks that it is far from an ordinary fruit. So, when I spotted these yellow, scaly babies during a trip to the grocery store, I immediately threw them in my cart.
The fundamental ingredients in a cocktail are a spirit, something sour/bitter, and something sweet. When deciding on the spirit for this cocktail we immediately thought of our newest addition to the liquor cabinet, Timeless Vodka. This smooth, premium quality vodka made an excellent base for our cocktail.
Timeless Vodka is four times distilled from fresh grown Iowa corn. Which means that this is a gluten-free vodka! It is purified with a unique process using activated coconut carbon, this really caught our attention! Not only does using coconuts to filter vodka create a smooth, crisp flavor profile but it is also eco-friendlier. We highly recommend giving Timeless Vodka a try.
After tasting the dragon fruit, we found that it was lightly sweet and very juicy. We liked the tropical vibe it was giving us, so we wanted to stick with tropical ingredients. Considering the coconut carbon purification process of Timeless Vodka, we thought coconut would be the perfect compliment to this cocktail. We decided on the creme of coconut syrup by the REÀL Ingredients for the sweetener in this cocktail. The white, creamy syrup kicked up the sweetness!
The inside of the dragon fruit is mainly white with small black seeds. We wanted the cocktail to visually represent the beauty of the white, speckled dragon fruit. The white coconut syrup complimented the white, spotted look we were going for and added a bit of froth. We love ourselves a pretty cocktail!
Coconut and lime are known to compliment each other. We are always stocked up on fresh limes, so adding lime juice to this cocktail was the easiest and best decision!
For every dragon fruit you can get your hands on you can make four cocktails. The rarity of the dragon fruit makes this cocktail special and should be shared with close friends in small intimate settings.
